smoked rye

This week’s special is smoked sprouted rye grain and it’s straight out of Chad Robertson’s Tartine 3.

The loaves contain 50% organic strong white flour, 20% freshly milled organic wheat flour, 20% high extraction organic wheat flour, and 10% freshly milled rye flour.

Then, I sprouted some rye grains (each 750g loaf contains 83g of whole rye grains), and gently smoked them using alder wood chips. That smokiness is infused into the bread and makes it a-may-zing as a cheese toastie, or even just with some salted butter.

The loaves will be at COGS at 09:45am on Saturday 14 December and will be £4.50.
